Mewati cuisine offers a unique food taste. Considering that Mewat historically encompassed areas in Haryana bordering Rajasthan, the cuisine shows influences of both. As a result, Mewati cuisine blends the two cultures in a culinary hot pot, with ingredients grown in the farmlands of Haryana transformed by the Rajasthani cooking techniques. The menu designed by Executive Chef Shivneet Pohoja is a result of extensive research and brings forth dishes like Jaun jawar khichda, Dal Mewati, Junglee maas and the famous Nimboo gosht biryani.

Want to know what Nimboo Gosht Biryani is? Chef Shivneet Pohoja explains, “It is said that this dish was made by mistake on a sunny winter afternoon. The fable goes: when bazaars came alive early evening in the villages of Mewat... street-side biryani stalls would start marinating goat meat in the afternoon; by dusk, dum-cooked steaming goat biryani would be ready. It is said that one day, a careless nudge from a child knocked a bowl of salt pickled kaagzi lemons that had been left to cure in the sun, into the parat (flat platter) of meat left marinating . The lazy vendor didn’t bother to remove the lemons. Instead he cooked the meat, lemons and rice all together. The dish became an instant hit with his patrons.”
